Description: To produce the Novello wine we use whole bunches of Merlot grapes, harvested strictly by hand, taking into account the health of the grapes.
With a particular vinification technique, called "carbonic maceration", the whole grapes are placed in an airtight tank in an atmosphere of carbon dioxide. The grapes remain in the tank for about 15 days and in this period the fermentation begins inside each single grape. After carbonic fermentation, the grapes are pressed and left to macerate for 4-5 days.
- Color: Ruby red with violet reflections.
- Bouquet: Intense berries and banana peel
- Taste: Vinous and soft.
- Gastronomic Combinations: When young, ideal with chestnuts or throughout the meal, it can be suitable for particular combinations when it is more mature.
Service Temperature: 16 - 18°C
