To make Novello you use the entire bunch of grapes without crushing them, the Cabernet Franc, and Merlot grapes are hand picked and the quality of the grapes is strictly controlled.
With a special vinification technique the entire grape is placed inside an air tight container CO2 is pumped into the container so that the fermentation occurs without the presence of oxygen, the grapes remain in this container for 15 days.
After the carbonic fermentation, the grapes are crushed and the final fermentation begins with the addition of selected yeast. To complete this wine it follows the standard process of decantation, filtration, and bottling.
From this process, you obtain a wine that has a ruby red color, with violet reflexes and a bouquet reminds you of wild berries, and banana peels. Its flavor is light and fresh and fruity.
This wine should be consumed while it is still young to enjoy it freshness. If aged the wine will become dryer and more full bodied.
Ideal for roasted chestnuts.
